What is the difference between a smoked breast and a dried breast?

The smoked Breast
Edouard Artzner breasts are cold smoked, at a temperature of between 18°C and 25°C, during a minimum of 24 hours. They are smoked with beech wood.
Before being sliced, the breasts are dressed: cut on the edges, they have no fat on the sides.

The dried Breast
Edouard Artzner breasts are dried for 60 hours in a well ventilated area. Their price is slightly higher than that of smoked breasts because of the significant amount of weight lost during drying (around 25%).
