Goose Foie Gras terrine, a recipe handed down from generation to generation

The jewel of Alsatian gastronomy, whole Goose Foie Gras in terrine is one of the emblematic products of the Edouard Artzner House.

Considered by connoisseurs as THE product par excellence, we are one of the last companies to offer it for sale. It is a fresh Foie Gras, not to be confused with raw Foie Gras, sold without cooking and used as the basis for making fresh Foie Gras in terrine.

To create this product, our Chefs carefully select the raw Foie Gras. They are then deveined by hand and seasoned with pepper, salt and a mixture of other spices that have been kept secret since 1803.

Cooked at a very low temperature (65°C), directly in its earthenware terrine, this Foie Gras is extremely creamy. The choice of this cooking method preserves the finesse and subtlety of the Goose Foie Gras flavours.

Presented in a magnificent earthenware terrine illustrated by Uncle Hansi, it will enhance your table and amaze your guests.

To ensure the best possible delivery conditions, this product is placed in its pretty tambourine.

The Foie Gras releases a little fat during cooking which will cover it when it cools and will thus play the role of protection.

Who is Uncle Hansi, creator of the illustrations on this terrine?

Hansi or Uncle Hansi, whose real name is Jean-Jacques Waltz, was born in Colmar in 1873. He is considered the ambassador of Alsatian traditions.

A renowned artist, he produced numerous illustrations of Alsace, published in the form of postcards and illustrated books, as well as menus and advertisements

His drawings depict an Alsace that is proud of its traditions, the qualities of its land and its products.

What type of wine to serve with Foie Gras in terrine?

We advise you to choose a white wine from Alsace, our preference is for :

- Pinot Blanc, a dry and fruity wine. It is characterised by its slightly acidic note.

- Pinot Gris, a full-bodied and fragrant wine. It is characterised by its slightly smoky or floral aromas.

You can also be surprised by a Champagne. Its fine bubbles will counterbalance and lighten the richness of the Foie Gras.

What accompaniment to choose with Foie Gras in terrine?

To bring out all the flavours of this Foie Gras, we recommend accompanying it with a slice of fine toasted baguette rather than toast.

A champion of sweet and sour combinations, you can also serve it with a Gewurztraminer jelly.

Of course you can! With its pretty illustrations and vintage look, it can be used as a storage box or as an ornament on a shelf.
