Signature

Whole Duck Foie Gras in a cloth, a recipe passed down from generation to generation
The pride of Alsatian gastronomy, fresh Duck Foie Gras in a cloth is one of Maison Edouard Artzner's signature products.

Considered by gourmets to be an exceptional product, it is made by our chefs in our workshop in Schiltigheim, Alsace (France).

To create this fresh foie gras, our chefs carefully select the raw foie gras. They are then deveined by hand and seasoned with pepper, salt and a blend of other spices that has been a closely guarded secret since 1803.

Cooked at a very low temperature (60-70°C), this duck foie gras is extremely creamy. This cooking method preserves the delicacy and subtlety of the duck foie gras's flavours.

It is presented in a way that is ideal for cutting into beautiful round slices. A festive starter that is perfect for Christmas dinner, parties or family events.

To cook this foie gras, our chefs use the sous-vide technique in a bain-marie. This method preserves the quality of the foie gras and ensures even, uniform cooking. The result is a creamy, melt-in-the-mouth texture and a mild, subtle flavour. Connoisseurs will enjoy rediscovering the flavours of traditional foie gras.
