Madeleines with Foie Gras and cranberry

Ingredients 

100gr Foie Gras,
180 g flour (T55),
2 teaspoons of baking soda,
12cl milk,
4 eggs,
2 shallots,
70gr dried cranberry,
20gr butter,
2 teaspoons of salt
a pinch of black pepper

Steps

1. Preheat the oven at 180 °C. Cut the shallot. Melt the butter in a pan. Add the shallot and cranberries. Let simmer on low heat during 5 minutes
2. Mix the flour with the baking powder in a bowl. Add the milk and eggs. Mix again. Add salt and pepper. Add the contents of the pan and the cubed foie gras
3. Fill each madeleine mold to 3/4
4. Bake for 15 minutes
