Smoked Duck breast Poke Bowl

Ingredients

1 pack of smoked Duck Breast
500g sushi rice
3 avocado
1 cucumber
300g corn
½ pineapple
A dozen cherry tomatoes
1 bunch coriander
6 cl rice vinegar
2 tbsp sugar

Cooking and preparing rice

Wash the rice several times, until the rinse water runs clear.

Put the rice in a pan and pour in a quantity of water proportional to the amount of rice (50cL). It's important that the rice is completely covered with water.

After putting a lid on, heat over high heat until boiling, then reduce to medium heat for about 10 to 15 minutes.

Once cooking is complete, leave to stand for a further ten minutes or so, without touching the lid. Steam should remain in the pan.

Meanwhile, heat the vinegar, sugar and salt mixture over medium heat (or for a few seconds in the microwave). Be careful not to boil the mixture. Once the sugar has melted, leave to cool.

Gently combine the rice and vinegar mixture in a salad bowl. Leave to cool while you prepare the remaining ingredients.
Preparation of the toppings

Thinly slice the avocados and cucumber.

Drain and rinse the corn, dice the pineapple and halve the cherry tomatoes.
Dressing bowls

Fill each bowl halfway with cooled or slightly lukewarm duriz vinegar.

Add the avocado, cucumber, corn, tomato and pineapple ingredients to the sides of the bowl and place rolled-up slices of duck breast in the center.

Finish with a few coriander leaves and season to taste (with a little soy sauce and sesame oil, for example).
