Summer salad with Lentils, Dates and Smoked duck breast

Ingredients

1 pack of smoked Duck Breast
Green salad
Green lentils (approx. 70g per person)
1 handful edamame beans
1 dozen dates
Candied yellow lemon
Juice of one lemon
Olive oil
Salt, pepper

Cooking lentils

In a pan, add 1 part lentils (rinsed beforehand) to at least 3 parts water and start cooking in cold water.

Cook the lentils for 20 minutes. Drain and leave to cool.
Preparation of ingredients

Wrap each date in a slice of smoked duck breast.

Prepare the seasoning: mix olive oil and lemon juice and add salt and pepper to taste.

Pour the cooled lentils and edamame beans into a salad bowl. Add half the seasoning and mix.
Salad assembly

Wash your salad, if fresh, and place a handful on your plate.

Add the remaining seasoning and toss to distribute it over all the leaves.

Arrange the lentil-edamame mixture on the salad leaves. Add small cubes of candied lemon and dates surrounded by duck breast.
